Recipe for green beans flavoured with lemon tea

There is one dish I don’t spend a lot of time talking about, the side dish. The side dish is imperative for meals that aren’t made in one big pot.  They need to complement the main dish nicely.

This week I ran into a former culinary classmate of mine and we got to talking about food, of course.  I was sharing about how I was going to prepare green beans for a client. Well, didn’t he provide the clincher to making this side dish perfect. (thanks Oliver!)

As a Chef, it’s really fun playing with different ingredients in food.  For example, here I use Organic Lemon Myrtle tea from Davids Tea.

Not only do I love cooking but for this recipe I get to use tea, which holds a special place in my heart: 

Lemon myrtle green beans with toasted almonds

1/2 pound green beans
1 tbsp lemon tea (or 4 Tbsp lemon juice)
1 cup chopped natural almonds
1 tbsp butter
1 tbsp honey
Salt to taste

  1. Fill  a medium sized pot with water, add salt and bring to a boil.
  2. While waiting for the pot to boil, fill a bowl with ice water. This will stop the green beans from cooking and keep them crunchy and delicious.
  3. Add green beans to the boiling water bring to a boil for three minutes.
  4. Remove the beans and put them into the cold water, also called an ice bath, and then drain them.  
  5. Melt butter in a pan. When it bubbles add honey, lemon tea and stir.
  6. Add the almonds and toss.
  7. Add green beans, toss and let warm about 4 minutes. Serve!

These are so delicious.  They taste like veggie candy.  A good crowd pleaser or food for kids.
